BBQ Ribs.  A staple in our house.  BBQ Ribs in the Crock Pot.  A serious staple during the summer.  I can quickly put this together in the morning, go outside and play all day, and then... what's that you say?  You're hungry?  No problem!  Ribs are ready!  SuperMom saves the day again  =)

Now when I said this dish can be put together quickly, I meant it.  The ingredients couldn't be more simple.  Rack 'O Ribs, applesauce, Worcestershire sauce, BBQ sauce (we prefer Sweet Baby Ray's) and an onion.  Oh and some salt & pepper.

First things first.  Peel and cut your onion in slices.  Not too thin & not too chunky.

Good.  I'm glad that part is over.  It's the hardest step.  Really.  Now take your ribs out of the package and sprinkle with salt and pepper to taste.  Then set your ribs into your CrockPot standing up with the meaty-side facing out.  Now take 1/2 cup applesauce and pour it in the middle, topped with the sliced onion and 3 Tablespoons Worcestershire sauce

Here comes the fun part!  Take your bottle of BBQ sauce and squirt it all over the top of your ribs.  Make sure it runs down in between the meaty-side of the rack and your Crock Pot   I also like to take a pastry style brush and really 'paint' the inside of the rack with the sauce too.  Done.  Put the lid on and enjoy your day!  Cook for 6-8 hours but don't rush it more then 6.  One time I tried too cook them on high for 4 hours and the ribs weren't nearly as tender as they should be.

If you feel like making your ribs extra pretty, chop a bit of fresh Italian parsley to toss on top of the ribs before serving.  I have a big parsley plant that came back all on it's own up in my Straw Bale Garden.  What the?!?  I thought parsley was an annual!

Ok, so it isn't quite summer here yet, but it's been beautiful outside nonetheless.  So tonight I served our ribs with corn-on-the-cob and loaded mashed potatoes.  Hubbie get's his topped with extra sauce, onions and parsley.  There you have it.  Kiddo's loved me, SuperHubbie loved me more, SuperMom status in tact!

Onion Topped BBQ Crock Pot Ribs
Prep Time:  10 minutes
Cooking Time:  6-8 hours
Servings:  6

Ingredients:
1 package Pork Ribs (or beef), 2-3 lbs.
Salt and Pepper to taste
1 onion, sliced
1/2 cup applesauce, unsweetened
3 Tbl. Worcestershire sauce
18 ounce bottle BBQ sauce
*optional extra BBQ sauce and 3 Tbl. chopped fresh parsley

Directions:
Chop your onion into medium-sized slices.
Sprinkle the rib rack with salt and pepper to taste.
Place the ribs into the Crock Pot with meaty-side facing out towards the pot.
Pour applesauce into the middle of the pot.  Top with sliced onions and Worcestershire sauce.
Pour the BBQ sauce all over the top and down both sides of the ribs.
Cover and cook for 6-8 hours.
Cut ribs into portions and serve topped with extra sauce, onions and parsley (if desired).

This dish is on our rotation list.  The family likes loves it, it's easy, and it's pretty inexpensive!  At about $12 for this dish, plus the mashed potatoes and corn the entire meal breaks down to about $4 a serving!  Bring on the summer ~ I am ready!
