When I was putting together the Top 13 posts of 2013 I was a little surprised that my Cream Cheese & Cinnamon Overnight French Toast was #3!  So this being the month of the famous 'Get Healthy Resolution' I thought I would help myself (and any fellow SuperMom's) stick with it once and for all.  I lightened it up the casserole with a few key ingredients without sacrificing the taste!  Plus cut down on the soak time so you can whip it up this Blueberry & Cream French Toast on a whim!

This new fun find, plus the number of eggs used really helped reduce the calories, sugar and fat content.  This version of French Toast Casserole has 137 less calories, drops the Carb count from 34 to 15 grams and 2.33 less Fat grams!  Are you a Weight Watcher?  The Points Plus dropped from 7 to 4!  (To see a full breakdown of Nutrition click on any of the 'Magic' buttons underneath a picture.)

Ok, let's get on with the recipe shall we?  Quickly prepare a batch of Reduced Fat Crescent Rolls.  Don't worry about your rolls looking pretty, we are just going to tear them in pieces in a moment.  Oh, and I doubled this batch so ignore the 16 rolls.

If you don't care at all about calories, or want to splurge for a special holiday, purchase about 5-6 croissants to tear up like this recipe.  Their buttery-goodness would be TO DIE FOR but we are sticking to that Resolution ladies so tear up your finished crescent rolls and place in a 9x13 inch baking dish.

Add your blueberries, either fresh or frozen.  Raspberries would be fun for a Valentines Day dish or perfect for Christmas morning.

Pour in your mixture of eggs, cream cheese, sugar, vanilla and milk.  Love me the chunks of cream cheese!

Let soak for 20 minutes.  Now the nice thing about the Overnight version is that all the work is done the night before so you can just wake up & pop it in.  But if you're not a good planner, or get a craving and want it now, the 20-minute-only soak rocks.

Bake in the oven and 45 minutes later you are in heaven.  Blueberry & Cream heaven.  A little sprinkling of powdered sugar is a sweet little option...

...but you know what's even better?  A little drizzling of blueberry syrup.

This dish is best served warm, not like it will last long sitting on your counter anyway.  If you are not a blueberry fan (what?!!?) just about any fruit would be fantastic.  Or a mix of fruit too.  OR how 'bout make it a dessert and use chocolate chips instead.  Holy smokes, maybe wait until you've reached your goal and then treat yourself to that one!

Light Blueberry & Cream French Toast Casserole
Prep Time:  15 minutes (plus crescent roll cooking time)
Cooking Time:  45 minutes
Serving Size:  12

Ingredients:
1 Roll of Reduced Fat Crescent Rolls (8 rolls, cut up)
2 cup Blueberries, fresh or frozen
8 ounces Greek Cream Cheese & Greek Yogurt, softened (sub. Neufchatel or regular cream cheese)
2/3 cup C&H Light Sugar & Stevia blend (sub. reg. sugar)
2 eggs
1 teaspoon vanilla
1 cup milk

Directions:
Cook crescent rolls according to directions then tear into bite size pieces.
Preheat oven to 350 degrees.
Place crescent pieces in 9x13 inch dish.
Sprinkle with blueberries.
Mix softened cream cheese, sugar, eggs and vanilla in a mixer until well combined.
Gradually add in milk while still mixing.
Pour cream mixture over crescent pieces.
Bake for 45 or until set in the middle.
Cover with foil the last 10 minutes if needed to prevent too much browning.
Serve warm.  Top with optional powdered sugar or syrup.
