A simple recipe sometimes can be confused with simple tasting. Not this one. Yes it's easy to create and have table or picnic ready in minutes. But the crunchy cookies mixed with the creamy cool whip and sweet strawberries leaves you wanting more. You've been warned.
Simple ingredients: Angel Food Cake, strawberries, whipped topping (I chose a light version) and mint chocolate cookies. I used Keebler Grasshoppers but I'm dying to make this with mint chocolate Girl Scout Cookies! Yum!
Simple Step 1: Cube the cake and quarter the strawberries.
Simple Step 2: Add sugar to the strawberries to make them just a bit sweeter if you'd like. Totally optional.
Simple Step 3: Add the whipped topping to the strawberries and mix. Then add the cake and gently fold together.
Simple Step 4: Chop up the mint chocolate cookies.
Simple Step 5: Save on clean up and serve directly from the bowl by adding more whipped topping on top of the berry mixture and sprinkle the cookies on top of that. Or dish up the berry mixture in individual sized bowls, dollop the whip and sprinkle the cookies. Delish!
Grab some Mason Jars and pour in the milk! Walk out with this in your hand and instantly transform into SuperMom and the hit of the party! Graciously accept the applause and pretend to wipe sweat from your brow...you've earned it!
Grasshopper Strawberry Shortcake Parfait
Prep Time: 10 minutes
Servings: 6
Ingredients:
1/4 prepared Angel Food Cake (4-5 oz), cubed
12 strawberries, quartered
1 Tbl spoon sugar or sweetener (optional)
1 cup light whipped topping + 6 Tbl spoons, divided
12 mint chocolate cookies, chopped
Directions:
Cube the Angel Food Cake and quarter the strawberries, set aside.
Add strawberries to a mixing or serving bowl. Add optional sugar if desired.
Add 1 cup whipped topping to strawberries and stir to coat.
Gently fold in Angel Food Cake.
Gently fold in Angel Food Cake.
Coarsely chop the cookies and set aside.
If serving from bowl add 6 Tbl. spoons of whipped topping on top of berry mixture and sprinkle cookies on top of the whipped topping.
If serving individually scoop equal amounts of berry mixture into six serving bowls. Drop 1 Tbl. spoon whipped topping onto each bowl and sprinkle cookies on top.
Store in refrigerator until serving.
