Maple Cinnamon Pecan Ice Cream: Pumpkin Pie's BFF ~ Taco Tuesday


SO excited to be a Harvest Your Health affiliate! But my words & opinions are 100% mine!
Look around people.  It's October.  It's Fall.  It's almost Thanksgiving too.  All those things spell one thing....PUMPKIN PIE.  The only thing more American than Apple Pie is Pumpkin Pie.  But I cannot let you read any further without giving you a strict warning: If you continue to read this recipe for Maple Cinnamon Pecan Ice Cream then plain 'ol jane vanilla will never be a suitable fit for Pumpkin Pie again.  Ever.  Probably for Apple Pie too...
Ice cream is by far my most favorite dessert.  When I discovered the Just Making Ice Cream book in the Harvest Your Health ebook bundle I just about fell out of my chair.  This picture made my mouth start to drool like Pavlov's dog.
Holy Quadruple Chocolate Crunch I think I'm in love!  Not a chocolate fan?  I'm a little wary of you but that's OK...how's this one for ya?  It's on the cover of the book for a reason.  
It's beautiful! 
And I'm sure it's just as delicious.  Marillyn's Tropical Rainbow Sorbet is made of banana, kiwi,  pineapple, strawberry and mango.  Or she says you can use any fruit you have on hand.  OK so before you kill me I'll give you the recipe I promised you!

Maple Cinnamon Pecan Ice Cream
3 cups cream and/or whole milk
½ cup maple syrup
3 egg yolks
1 Tbsp vanilla
1 Tbsp cinnamon
pinch of sea salt
1 Tbsp. arrowroot powder (optional)
¾ cup chopped pecans

Whisk together all the ingredients in a bowl and mix until thoroughly combined. 
If needed, chill the mixture.
Pour mixture into your ice cream maker and freeze according to the manufacturer’s instructions or use one of the no-maker methods listed on page 26.
When the ice cream is done churning, quickly scoop ice cream into a container or bowl. 
Serve right away or let it firm up in the freezer for a couple hours before serving.

Easy right?  This books is also filled with practical ice cream-making tips choosing an ice cream maker, how to make ice cream without an ice cream maker and the basic principles of delicious homemade ice cream using healthy ingredients & alternative sweeteners.

So we had dessert first.  Don't worry about it, SuperMoms are allowed.  But to set a good example I must give you a delicious side dish that left my family drooling like a dog too.  It's from another book in the Harvest Your Health bundle!

Wait, not a meat lover?  Then THIS book is a must own!  It's called The Veggie Book and it helps you turn the veggies you want to serve into the veggies your kiddo's (and maybe your hubbie!) will want to eat.  It features more then 10 veggies in over 150 pages of recipes, nutrition and even storage information for vegetables that many of us grew up eating out of a can.
Oh, you want yet another recipe? You got it! How yummy does this sound! She recommends them dipped in her Creamy Avocado Dip, but you'll have to buy the Harvest Your Health bundle to get that recipe!

Crispy Ranch Zucchini Spears
2 Zucchini 
½ teaspoon salt
¼ Cup sour cream or yogurt 
1 Tablespoon parsely
1 egg
1teaspoon dill
1teaspoon garlic powder
1 Tablespoon onion powder
¼ teaspoon salt
½ stick butter, melted
1½ Cups almond flour or bread crumbs

Cut zucchini in sixths lenthwise.
Mix together the egg, sour cream, and ¼ teaspoon salt in one bowl and bread crumbs, ½ teaspoon salt, and seasonings in another.
Dredge in wet then dry mixture and place cut side up on a sheet tray.
Drizzle a small amount of butter over every spear.
Bake for 15 minutes on 375°
